These little bites are dripping with flavour.
1.2-1.5kg pork belly, skin removed
1 tablespoon avocado oil
1/4 cup cocominos
1 tablespoon sesame oil
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/8 teaspoon cayenne
1 and a 1/2 teaspoons sea salt
1/8 teaspoon cracked black pepper
Optional: Sliced red chilli, diced spring onions to serve
Place the onion powder, garlic powder, paprika, cayenne, sea salt and pepper in a large bowl, then mix until well combined
Trim the fat cap off the pork belly, and cut into chunks/cubes about 5cmx5cm (try making them as even in size as possible for even cooking)
Place the pork belly pieces in the dry spice mix and toss until they are all thoroughly coated, then set aside
In a small bowl, mix the cocominos, sesame oil and honey, then set aside for now
Heat the avocado oil in a large skillet over high heat
Once the skillet is hot, add the pork bites and cook, turning occasionally until golden and heated through (around 10-minutes)
Add the cocominos, sesame oil and honey mixture to the pan
Toss to coat the pork bites completely, then continue cooking and tossing for a further 3-5-minutes
Transfer to a bowl, top with the sliced chilli and spring onion (if using), squeeze some fresh lime juice over the top and serve immediately!
