Pizza That'll Knock Your Socks Off

Love these pizzas because the crust is crispy and also a little chewy. The recipe below makes one large pizza, so just double or triple depending on how many mouths you have to feed!

Pizza base/crust ingredients:

  • 2 medium eggs

  • 40 g butter or ghee, melted (can substitute 2 tablespoons of olive oil)

  • ½ teaspoon salt

  • ½ teaspoon garlic powder

  • ½ teaspoon dried oregano

  • ¼ cup warm water

  • 2/3 cup cassava flour, tapioca, or arrowroot

  • 1/3 cup coconut flour

For the toppings:

  • 2 tablespoons tomato paste

  • 2 tablespoons olive oil

  • ½ teaspoon dried oregano

  • 1 cup grated cheese such as cheddar or mozzarella

  • 2 medium tomatoes, sliced

  • ~40g of prosciutto

  • 1 jalapeno, deseeded and sliced

  • Small handful of sliced red onion

  • Small handful of pitted olives, sliced

Method:

  1. Preheat the oven to 200°C

  2. In a medium bowl, whisk together the eggs with melted (but not hot) butter/ghee, seasonings and water, until fluffy

  3. Add the tapioca flour and coconut flour and mix thoroughly. The batter should be thick, not watery. If needed, add a little more of either of the flours

  4. Place a sheet of parchment paper on a flat oven or pizza tray (pizza tray preferred)

  5. Scoop the mixture onto the parchment paper, and either using a spatula, back of a spoon, or your hands (like I did), flatten the mixture into a thin pancake

  6. Ensuring the oven has completely warmed up, place the tray on the middle shelf and bake for approx. 15 minutes, until lightly browned and a little crispy. If cooking a few pizzas, you might need to rotate the trays from top to bottom as the oven temperature can vary. Allow a little more time in this case

  7. While the base is baking, mix together the tomato paste, olive oil and dried oregano in a bowl

  8. Once the base is slightly golden brown, remove from oven and add the toppings

  9. Spread a spoonful of the tomato paste mixture over the pre-cooked base

  10. Sprinkle with a few tablespoons of grated cheese

  11. Add a few slices of tomatoes, olives, jalapeno, onion and the prosciutto

  12. Sprinkle some more cheese over the top

  13. Pop the pizza back in for about 5-6 minutes, until the cheese has melted and browned lightly

  14. Slide the pizza off the parchment paper, cut into desired amount of slices and serve!
