Mincey Goodness

Similar to a recipe that my mum used to always make. #thanksmum

Ingredients:

  • 500g grass-fed beef mince

  • 1 tablespoon extra-virgin olive oil

  • 1 brown onion, sliced and diced

  • 1 garlic clove, minced

  • 1/2 – 1 head green cabbage (about 4 cups worth), chopped roughly

  • 2 cups diced tomatoes

  • 1 teaspoon concentrated beef stock

  • ¼ cup tomato paste

  • 1 teaspoon sea salt

  • 1 teaspoon oregano

  • ½ teaspoon turmeric powder

  • ½ teaspoon smoked paprika

Method:

  1. Heat the extra-virgin olive oil in a large skillet over medium-high heat

  2. Add onion and garlic, cooking until soft (about 2 to 3 minutes)

  3. Add the mince to the skillet and cook until brown, breaking the mince up as you go

  4. Add the cabbage, diced tomatoes, stock, tomato paste and seasonings to the skillet, stirring until well combined

  5. Cover and let simmer for 20 to 25 minutes, until the cabbage is soft

  6. Serve alongside some veggies, or on top of some rice
