Lentil Soup
Anything slow-cooker gets my tick of approval.

Ingredients:
1 1/2 cups red lentils
4 large carrots peeled and chopped
1 red capsicum, chopped
2 celery stalks chopped
4 leaves of kale, stems removed and chopped
2 red or purple potatoes, peeled and chopped
1 jalapeno, chopped & de-seeded
3 cloves of garlic, crushed
1/2 a brown onion, chopped
1 teaspoon salt
1 teaspoon dried parsley
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon garlic salt
1/4 teaspoon cayenne pepper
6 1/2 cups vegetable stock
Optional: Greek or coconut yoghurt
Method:
Place all ingredients in a slow cooker
Cook on low for 8-10 hours (Stir a few times throughout the cooking if possible)
Spoon mixture into a bowl, then serve with a dollop of natural Greek yoghurt, or natural coconut yoghurt
