Lentil Soup

Anything slow-cooker gets my tick of approval.

Ingredients:

  • 1 1/2 cups red lentils

  • 4 large carrots peeled and chopped

  • 1 red capsicum, chopped

  • 2 celery stalks chopped

  • 4 leaves of kale, stems removed and chopped

  • 2 red or purple potatoes, peeled and chopped

  • 1 jalapeno, chopped & de-seeded

  • 3 cloves of garlic, crushed

  • 1/2 a brown onion, chopped

  • 1 teaspoon salt

  • 1 teaspoon dried parsley

  • 1/2 teaspoon paprika

  • 1/2 teaspoon oregano

  • 1/2 teaspoon garlic salt

  • 1/4 teaspoon cayenne pepper

  • 6 1/2 cups vegetable stock

  • Optional: Greek or coconut yoghurt

Method:

  1. Place all ingredients in a slow cooker

  2. Cook on low for 8-10 hours (Stir a few times throughout the cooking if possible)

  3. Spoon mixture into a bowl, then serve with a dollop of natural Greek yoghurt, or natural coconut yoghurt
