Lemon Pepper Salmon

Soooooo damn soft and melty 🤤


Ingredients:

  • 4 salmon fillets

  • 2 tablespoons butter, melted

  • 2 tablespoons lemon juice

  • 1 tablespoon lemon zest

  • 4 strips of lemon around 1cm thick

  • 2 cloves garlic, minced

  • 1 teaspoon fresh black pepper

  • ½ teaspoon sea salt

  • Optional: ½ teaspoon red pepper flakes

  • Note: For the lemon requirements, you may need one or two lemons depending on their size


Method:

  1. Preheat the oven to 200°C

  2. In a small bowl, whisk together minced garlic, black pepper, lemon juice, melted butter, salt and lemon zest

  3. Prepare a baking sheet onto an oven-proof tray, and lay the salmon fillets down

  4. Pour the sauce on top of each salmon piece, using a brush or spoon to spread the mixture on evenly (it will pool around the sides of the salmon which is ok)

  5. Place the lemon strips on top of each fillet and top with additional black pepper, lemon zest or salt if desired

  6. Bake the salmon for 12-18 minutes, depending on the thickness and preference

  7. Serve with quinoa, rice, cauliflower rice, mash potato or any preferred vegetables!
