Korean BBQ Pork Chops

Ingredients:
4 bone-in pork chops
1 tablespoon coconut sugar
2 tablespoons cocominos
1 tablespoon sesame oil
2 tablespoons of minced shallots
2 tablespoons apple cider vinegar
2 tablespoons fresh lime juice
2 garlic cloves, minced
1 teaspoon chilli sauce
½ teaspoon ground black pepper
For cooking: Extra-virgin olive oil
Method:
To make the sauce, mix (or even better, blend!) together all ingredients minus the pork chops and cooking oil
Place pork chops in a large baking dish, then cover completely with the sauce mixture on all sides
Cover the dish, then marinate in the fridge for 6-10 hours
Heat the oil in a large skillet over medium-high heat, then add the pork chops, cooking for 6-7 minutes per side
If there is a layer of fat on your pork, make sure to render this side in the pan by cooking the pork on its side, fat side down, for several minutes
Meanwhile, pour the sauce into a small saucepan, bring to the boil, then reduce heat to low, simmering for 10-minutes
Serve the sauce over the top of the pork chops, alongside some veggies of choice
