Honey Ginger Chicken
This one is simple and reeeeaaaally hits the spot.

Ingredients:
750g boneless chicken thigh, cut into chunks
1/3 cup raw honey
1 teaspoon of cocominos
1 teaspoon sesame oil
1 teaspoon of chilli sauce
½ teaspoon of apple cider vinegar
2 teaspoons freshly grated ginger
3 garlic cloves, minced
1 ½ teaspoons sea salt
3 cups purple cabbage, cut into thin strips/chunks
2 tablespoons butter, halved
1 tablespoon fresh lime juice
2 spring onions, chopped
1 tablespoon sesame seeds
Rice to serve (cauliflower, white, jasmine, basmati)
Method:
To make the sauce, blend together the honey, cocominos, sesame oil, chilli sauce, apple cider vinegar, ginger, garlic, and lime juice
Begin preparing rice of choice
Sprinkle 1 teaspoon of the sea salt over the chicken thigh
Heat half the butter in a large skillet over medium-high heat, then start sautéing the chicken
Sprinkle the other ½ teaspoon of the sea salt over the cabbage
Heat the remainder of the butter in a separate skillet, and start sautéing the cabbage
Continue cooking the chicken and cabbage, stirring each occasionally, until chicken is cooked through
Once chicken is cooked through, pour sauce over the top and cook for 1-2 minutes, until bubbly
Prepare each bowl by laying a scoop of the rice on the bottom, adding some of the cabbage, then topping with the honey ginger chicken
Sprinkle with some sesame seeds, then garnish with spring onions
