Homely Beef Stroganoff

This recipe makes a nice mid-week meal, and is perfect served over cauliflower rice, veggie noodles, baked potatoes or whatever pasta of your preference!

Ingredients:

  • 5 tablespoons ghee or grass-fed butter, divided

  • 700g beef stew meat (or rump, sirloin, etc. with fat removed and cut into strips)

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • ½ teaspoon cayenne pepper

  • 1 onion finely diced

  • 4 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce (or coconut aminos)

  • 2 teaspoons Dijon mustard

  • 1 ½ cups bone broth

  • 1 tablespoon fresh lemon juice

  • 300g portabella mushrooms, sliced

  • 3/4 cup coconut cream

  • Rice, veggie rice/pasta, pasta of personal preference

Method:

  1. Melt 2 tablespoons of the butter/ghee in a heavy pot over medium heat

  2. Add the beef, pepper and cayenne, and brown the beef on all sides for 2 minutes

  3. Reduce the heat to medium-low and continue to brown for another 5 minutes

  4. Using a spoon, remove the beef along with any juices and put in a bowl to the side for now

  5. Next, add the remaining ghee plus the onions and garlic, sauté for two minutes, then add the mushrooms, cooking until soft

  6. Whisk together the remaining ingredients, except for the coconut cream and lemon juice, then add to the pot

  7. Add the meat, along with the juices, back in, bring the mixture to a boil, then reduce the heat to low and cover the pot

  8. Cook for 45 minutes or until the beef is tender

  9. Over the next few steps, you may like to start cooking the rice/pasta of your preference whilst the stroganoff finishes cooking

  10. Remove the lid of the stroganoff, stir in the coconut cream and lemon juice, increase the heat to medium, then cover and cook for 10 minutes

  11. Remove the lid, bring the sauce to a boil and reduce until the sauce reaches your desired consistency (you can add a tablespoon or two of tapioca flour to make it thicker if you want. Just mix with a little bit of water in a mug before adding it to the mixture)

  12. Serve over your rice or pasta and enjoy!
