Godly Cauliflower Bake

This cauliflower bake makes a wicked side-dish, and it is HIGHLY recommended that you add nutritional yeast (can get from most supermarkets in the health food aisle) as it gives it an awesome, cheesy flavour.


  • 1 tablespoon of cooking fat (butter, ghee, coconut oil, olive oil)

  • 3 garlic cloves, minced

  • Large brown onion

  • 1 extra-large head of cauliflower, cut into chunks and steamed

  • 1 cup (240 ml) coconut cream

  • ½ teaspoon sea salt

  • Highly recommended: ¼ cup nutritional yeast, plus extra for sprinkling for the “cheesey” flavour


  1. Pre-heat the oven to 180°C

  2. Heat the cooking fat in a skillet over low heat

  3. Add the garlic and onion to the skillet and sauté for 5-6 minutes until the onion is translucent

  4. Transfer onion and garlic to a high-speed blender

  5. Add all the remaining ingredients to the blender, plus 2 cups of the steamed cauliflower and blend until smooth

  6. Line the bottom of a ceramic baking dish with the remaining cauliflower chunks

  7. Pour in the sauce mixture and shake gently to fill the gaps

  8. Sprinkle with a little more nutritional yeast and a pinch of salt

  9. Bake for 8-10 minutes to allow it to settle and form a light crust on top
