Godly Cauliflower Bake
This cauliflower bake makes a wicked side-dish, and it is HIGHLY recommended that you add nutritional yeast (can get from most supermarkets in the health food aisle) as it gives it an awesome, cheesy flavour.

Ingredients:
1 tablespoon of cooking fat (butter, ghee, coconut oil, olive oil)
3 garlic cloves, minced
Large brown onion
1 extra-large head of cauliflower, cut into chunks and steamed
1 cup (240 ml) coconut cream
½ teaspoon sea salt
Highly recommended: ¼ cup nutritional yeast, plus extra for sprinkling for the “cheesey” flavour
Method:
Pre-heat the oven to 180°C
Heat the cooking fat in a skillet over low heat
Add the garlic and onion to the skillet and sauté for 5-6 minutes until the onion is translucent
Transfer onion and garlic to a high-speed blender
Add all the remaining ingredients to the blender, plus 2 cups of the steamed cauliflower and blend until smooth
Line the bottom of a ceramic baking dish with the remaining cauliflower chunks
Pour in the sauce mixture and shake gently to fill the gaps
Sprinkle with a little more nutritional yeast and a pinch of salt
Bake for 8-10 minutes to allow it to settle and form a light crust on top
