Easy As Pizza Quiche


  • 12 eggs

  • 1 teaspoon of salt

  • ½ teaspoon pepper

  • ½ teaspoon thyme

  • ½ teaspoon oregano

  • ¼ teaspoon paprika

  • ½ teaspoon of garlic

  • 3 tablespoons of nutritional yeast, or cheese of choice

  • 1 cup of frozen spinach, defrosted and drained completely

  • ½ cup asparagus, chopped into small pieces

  • 1 cup of cherry tomatoes, sliced in half

  • Large red capsicum, cut into thin slices

  • ½ cup pitted kalamata olives, sliced

  • ¼ cup of onion, sliced and diced

  • Grass-fed butter, to smear the baking dish


  1. Preheat the oven to 180°C

  2. Whisk the eggs, salt and pepper until fluffy

  3. Combine the rest of the ingredients in a mixing bowl and toss thoroughly until well combined

  4. Smear the inside of the baking dish with a thin layer of butter

  5. Scatter vegetables in a large baking dish evenly, reserving a few of the capsicum slices for decoration if wanted

  6. Pour egg mixture over the vegetables and top with the red pepper slices

  7. Bake for 45-minutes until the top has a sheen to it, and centre is firm

  8. Allow to cool for 5-10 minutes before slicing and serving

  9. Season with salt & pepper for personal preference!

This quiche can be stored in an airtight container in the fridge for a few days too.
