Easy As Pizza Quiche

Ingredients:
12 eggs
1 teaspoon of salt
½ teaspoon pepper
½ teaspoon thyme
½ teaspoon oregano
¼ teaspoon paprika
½ teaspoon of garlic
3 tablespoons of nutritional yeast, or cheese of choice
1 cup of frozen spinach, defrosted and drained completely
½ cup asparagus, chopped into small pieces
1 cup of cherry tomatoes, sliced in half
Large red capsicum, cut into thin slices
½ cup pitted kalamata olives, sliced
¼ cup of onion, sliced and diced
Grass-fed butter, to smear the baking dish
Method:
Preheat the oven to 180°C
Whisk the eggs, salt and pepper until fluffy
Combine the rest of the ingredients in a mixing bowl and toss thoroughly until well combined
Smear the inside of the baking dish with a thin layer of butter
Scatter vegetables in a large baking dish evenly, reserving a few of the capsicum slices for decoration if wanted
Pour egg mixture over the vegetables and top with the red pepper slices
Bake for 45-minutes until the top has a sheen to it, and centre is firm
Allow to cool for 5-10 minutes before slicing and serving
Season with salt & pepper for personal preference!
This quiche can be stored in an airtight container in the fridge for a few days too.
