Dry Rubbed Crispy Pork Ribs

Ingredients:
Rack of pork ribs
1 teaspoon Himalayan sea salt
1/2 teaspoon cracked black pepper
1/2 teaspoon cayenne powder
1/2 tablespoon smoked paprika
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1/2 tablespoon coconut sugar
Method:
Preheat oven to 140°C and line a baking tray with baking paper
In a small bowl, combine coconut sugar, cayenne, onion powder, smoked paprika, black pepper, and sea salt, mixing thoroughly
Pat the ribs dry with paper towel or tea towel
Rub the dry mixture on both sides of the ribs, rubbing it in thoroughly and spreading evenly (if your rib rack is quite large, you may need to make a little more rub mixture to make sure it coats evenly all over)
Place the ribs on the baking tray, place another sheet of baking paper over the top to cover the ribs from any direct heat, and bake for 2 hours
After the 2-hours, take the top baking sheet off, turn the oven up to 225°C for 5-7-minutes to crisp up the top of the ribs, then remove from the oven and enjoy hot!
