Although a tad sceptical at first, I tried out this coconut “oatmeal” and it was actually delicious!
4 tablespoons of coconut flour, sifted
1 tablespoon of shredded coconut
½ cup coconut milk
1 large egg, room temperature
½ teaspoon vailla extract
Heat a small saucepan over medium-high heat
Add all of the ingredients, minus the egg, and start whisking
Whisk until the mixture nearly comes to a boil (it should be thick)
You may need to adjust the coconut flour and/or coconut milk, depending on the consistency of your coconut flour
Reduce heat to low, or even take the saucepan off the heat completely, for 2-3 minutes and then add the egg (the mixture needs to be fairly cool when you add the egg so that it does not scramble)
Whisk the egg into the mixture another 2-3 minutes until it is fully combined with the batter and thickens a little more
Transfer “oatmeal” to a bowl and top with your favourite toppings before devouring!
Some ideas for toppings could be things like berries or some other of your favourite fruits chopped up, a little drizzle of honey or maple syrup, a dollop of nut butter, shaved dark chocolate, coconut flakes, chia seeds, etc. Go nuts.
